Root Cellaring in Canada

How many months your storage actually has to bridge, worked out for 52 Canadian cities — which of the spaces you already own can hold that, and which crops last long enough to see it out.

Root cellaring in Canada: the span from first fall frost to the following last spring frost runs from about 2.8 months in Victoria to about 9.1 in Thompson, and exceeds six months in 41 of 52 cities. Almost nothing keeps that long — cured garlic at up to 9 months is the one crop that can. Roots want 0–2°C and 90% humidity; onions, garlic and squash want cold and dry, and the two must be kept apart. A heated basement at 15–20°C is not a root cellar. So in most of Canada a cellar covers the first half of the gap, and freezing, overwintering in the ground and winter harvesting cover the rest.

How Long Your Storage Has to Last

Almost every root-cellaring guide a Canadian gardener finds was written for a place where the gap between the last fresh harvest and the first is four or five months. Here it is usually longer, and in the Prairies and the North it is close to twice that. Before deciding what to store, it is worth knowing what you are actually being asked to bridge.

The table below measures the span from each city's average first fall frost to the following spring's last frost, from Environment and Climate Change Canada normals. It runs from 2.8 months in Victoria to 9.1 in Thompson, and passes six months in 41 of 52 cities.

Read this as an outer bound, not as the real gap. Fresh food resumes before the last frost date — overwintered greens, rhubarb, asparagus and early radishes all arrive ahead of it, and in a mild zone a cold frame supplies salad through the whole winter. The figure is the span you would have to bridge if storage were your only source. That it overstates the gap is the point: shortening it is the strategy, and every month you take off the end is a month the cellar does not have to survive.

The Space You Actually Have

Very few Canadian households have a purpose-built root cellar, so the real question is which of the spaces you already own holds somewhere near 0–4 °C without freezing through January. The honest answers are mixed, and one of the most obvious candidates is the worst.

Partitioned cold room  ✓

A small room on the north or east foundation wall, insulated from the heated basement and vented outside. This is the real thing, it is built into a great many Canadian houses behind the stairs, and people routinely do not realise they have one. If you do, measure it before assuming anything else.

Unheated crawlspace  ✓

Often genuinely good and usually overlooked. It sits between ground temperature and house temperature, so it rarely freezes, and it tends to be damp — which roots want. The obstacles are access and the fact that nobody enjoys crawling under a house in February.

Unheated porch or entry  ~

A shoulder-season space. Reliable in October and November, and often the best place in the house for the first two months of storage — but it tracks outdoor air too closely to trust in January anywhere with a real winter.

Heated basement  ✗

The commonest disappointment. A modern Canadian basement runs 15–20 °C with the furnace on, against the 0–4 °C storage crops want. Carrots there sprout and go limp in weeks. It is not a cold space; it only feels like one.

Attached garage  ✗

Tempting and usually fatal. It holds a few degrees above outdoor air, which is nowhere near enough in a Prairie January, and a single hard freeze turns a bin of carrots to mush the moment it thaws. A detached garage or shed is worse still — it follows outdoor air almost exactly.

The test is the same for all of them, and it is not the one people run. Put a thermometer in the space and read it through the coldest week of January, not in October when every unheated corner reads promising. A space that holds 3 °C in November and −8 °C in February is not a cold space with a problem; it is a freezer with a good autumn.

Two Storage Climates, Not One

This is the distinction that decides whether storage works, and mixing the two groups is the commonest failure after choosing the wrong room. One room can serve one of these climates well. It cannot serve both.

Cold and damp — 0–2 °C, ~90% humidity

Roots dry out and go limp in ordinary air, so they are packed in damp sand or sawdust and kept as humid as the space allows.

  • Carrots — 4–6 months
  • Rutabaga — 4–5 months
  • Beets — 3–5 months
  • Parsnips, turnips, daikon — 2–3 months

Cold and dry — with airflow

These rot in the humidity that keeps carrots crisp. They are cured warm and dry first, then hung or racked somewhere cool with air moving.

  • Garlic, cured — up to 9 months
  • Onions — 4–8 months at 0–7 °C
  • Winter squash — 2–4 months
  • Potatoes — 4–6 months, dark, at 4–10 °C

Potatoes sit slightly apart: they want cool and dark rather than either extreme, and light turns them green. Keep them away from apples, which give off ethylene and make potatoes sprout.

These storage lives are published by extension services and long practice rather than measured here — the same tier as the cultivar-hardiness figures elsewhere on this site, and unlike the frost dates above, which are ECCC normals. Every one of them also assumes the crop went in sound and correctly cured. A bruised carrot does not keep for four months in any cellar.

When the Cellar Runs Out

Set the two halves of this page against each other and the conclusion is unavoidable: in 41 of 52 Canadian cities the gap runs past six months, and only cured garlic reliably goes that far. That is not a reason to skip root cellaring — it is a reason to plan the handover before February arrives and the bins are empty.

What is root cellaring?

Root cellaring is storing whole, uncooked vegetables through winter in a cold, dark space rather than freezing, canning or drying them. It costs no energy and no processing time, and it keeps the vegetable whole, which is why it survived as the default method in Canada long after refrigeration arrived. The name comes from the purpose-built underground room, but very few Canadian households have one now. In practice root cellaring means finding the coldest space you already own that does not freeze, working out what temperature and humidity it actually holds through January, and matching crops to it. That matching is the whole skill — a space that suits carrots will ruin garlic, and the reverse.

How long does root cellar storage need to last in Canada?

Far longer than most guidance assumes, because most guidance is American. Measured against Environment and Climate Change Canada frost normals, the span from a city's average first fall frost to the following spring's last frost runs from about three months in Victoria to about nine in northern Manitoba, and more than six months in the large majority of Canadian cities. That figure is an outer bound rather than the real gap — overwintered greens, rhubarb, asparagus and early radishes all arrive before the last frost — but even discounted it is longer than most stored crops keep. The practical consequence is that in most of Canada a root cellar is not a way to eat from storage until spring; it is a way to cover the first half of the winter well, and something else covers the second.

Can I use my basement as a root cellar?

Usually not as-is, and this is the commonest disappointment. A modern Canadian basement is heated, insulated and dry — typically 15 to 20°C with the furnace running, against the 0 to 4°C that storage crops want. Carrots stored at basement temperature sprout and go limp in weeks rather than lasting months. What can work is a partitioned cold room on the north or east foundation wall, insulated from the rest of the basement and vented to outside air, which is the standard arrangement in older Canadian houses and is still built into many newer ones behind the stairs. If your basement has a small unheated room with a vent to the outside, that is a root cellar and it is worth measuring before you assume otherwise. Put a thermometer in it in January and read it before committing a harvest.

What about the garage, the crawlspace or an unheated porch?

An attached garage is the most tempting and the most likely to freeze: it will hold a few degrees above outdoor air, which in a Prairie January is nowhere near enough, and one hard freeze turns a bin of carrots to mush on thawing. An unheated crawlspace under a heated house is often genuinely good, because it sits between ground temperature and house temperature and rarely freezes — the usual problems are damp, which roots like, and access, which people do not. What is the difference between damp storage and dry storage?

It is the distinction that decides whether storage succeeds, and putting the two groups together is the single commonest failure. Which vegetables store the longest?

By the figures published across this site, cured garlic leads at up to nine months, which makes it the one common crop that can genuinely bridge a full northern winter. Onions follow at four to eight months at 0 to 7°C, then potatoes at four to six months stored dark at 4 to 10°C, carrots at four to six months packed damp, rutabaga at four to five, beets at three to five, winter squash at two to four, and parsnips, turnips and daikon at two to three. These are storage lives published by extension services and long practice rather than measurements made here, and every one of them assumes the crop was harvested undamaged and cured or packed correctly. A bruised carrot does not keep for four months no matter what the space is doing.

What do I do when the cellar runs out?

Plan for it rather than being surprised by it, because in most Canadian cities it will happen well before spring. Four things close the remaining gap. Freezing and canning handle the crops that store poorly and the surplus of the ones that store well. Overwintering in the ground works for parsnips, leeks, carrots and kale, which sit under mulch or snow and are dug as needed — in effect using the garden itself as the cellar, and frost improves several of them. Winter harvesting from a cold frame or low tunnel supplies fresh greens through the coldest months in milder zones. And early spring crops arrive before the last frost date the table above uses, which is exactly why that figure is an outer bound. Most Canadian households end up using three of the four.

How do I stop stored vegetables rotting?

Four habits do most of the work. Store only sound produce: any vegetable that is bruised, cut, insect-damaged or forked will rot first and take its neighbours with it, so the damaged ones get eaten first rather than stored. Cure what needs curing — garlic, onions and winter squash all need a warm dry period before cold storage, and a rushed cure is the usual reason a crop that should keep nine months goes soft by autumn. Keep the two storage climates apart, since humidity that suits roots destroys alliums. And check monthly: pull anything softening or sprouting, because one rotting vegetable in a closed bin will spread. Ethylene matters too — apples give it off and it makes potatoes sprout, so they do not share a room.
