Icewine is the one great wine that Canada's cold, not its warmth, makes possible. While most of the wine world races to pick grapes before the first frost, Canadian icewine growers do the opposite — they leave the fruit hanging for months, through the killing frost and into deep winter, waiting for a single hard freeze that turns the grapes to marbles on the vine.
That freeze has a number: −8 °C. It's the line that legally separates icewine from every other sweet wine, and the reason Canada — not Germany, where the style was born — now makes more icewine than the rest of the world combined.
Icewine in Canada is made from grapes left to freeze naturally on the vine and harvested only when the air hits −8 °C or colder — usually in December or January, weeks after the season-ending fall frost. The frozen grapes are pressed while frozen, so only a trickle of intensely sweet juice comes out. Canada's VQA rules require a natural on-vine freeze (no artificial refrigeration), a continuous harvest-and-press at or below −8 °C, at least 35 Brix, and 100+ g/L residual sugar. Canada makes more icewine than every other country combined — ~80–90% from Ontario's Niagara Peninsula, most of the rest from BC's Okanagan, from Vidal, Riesling, and Cabernet Franc.
The −8 °C Rule — What Makes It Icewine
In Canada, "icewine" is a protected term. To carry the VQA (Vintners Quality Alliance) icewine designation — the mark of authentic Canadian icewine — a wine has to meet strict, verified rules:
- Frozen naturally on the vine. The grapes must freeze on the plant, outdoors, in real winter cold — artificial refrigeration is forbidden. Grapes picked and then frozen in a freezer can never be called icewine.
- Harvested and pressed at −8 °C or colder. The whole harvest and pressing must happen as a continuous process while the air temperature is at or below −8 °C. A VQA agent monitors the harvest and stops it the moment the temperature climbs above the line.
- At least 35 Brix. The frozen, dehydrated grapes must reach a very high sugar concentration before pressing.
- 100+ grams per litre of natural residual sugar. All of the sweetness comes from the concentrated grape juice itself — no sugar or sweetener may be added.
The physics is the whole trick: when a grape freezes, its water turns to ice but its sugar, acid, and flavour do not. Press the grape while it's still frozen and the ice stays behind in the press — only a few drops of syrup-thick, intensely flavoured juice run out. That's why it takes a whole vine's crop to make a little icewine, and why the −8 °C threshold matters: warmer than that and too much water comes through, and the wine isn't concentrated enough to be icewine.
When Does the Icewine Freeze Come?
This is where icewine and ordinary gardening part ways. The first fall frost — the 0 °C night that ends the vegetable garden — arrives across Canada's wine regions in September or October. But that frost is far too mild for icewine. Icewine needs −8 °C, a much deeper freeze that typically doesn't arrive until December or January — sometimes not until February in a mild winter.
The gap is the drama. From the killing frost in October to the icewine freeze in December–January, the grapes hang for two to three extra months — exposed to birds, rot, wind, and storms — while the grower watches the forecast and waits. When a −8 °C night finally lands, the whole crop is picked fast, often overnight, before dawn warms the air back above the line.

Where Icewine Is Made in Canada
Making icewine needs a rare double: summers warm enough to ripen the grapes fully, and winters cold enough to guarantee a natural −8 °C freeze. Only a few Canadian regions have both.
By far the largest region: ~80–90% of Canada's icewine. A long, warm summer moderated by Lake Ontario ripens the fruit, and a reliably deep winter freeze finishes it. The heart of the Canadian icewine industry.
The second region. The Okanagan's hot summers and cold interior winters freeze dependably — unlike mild coastal BC (Vancouver, Victoria), which rarely reaches a sustained −8 °C and can't make true icewine.
Smaller producers round out the map. Both have the hard winters; the challenge is ripening cold-hardy grapes in a shorter, cooler summer, so volumes are modest but growing.

Why Canada Leads the World
Icewine (Eiswein) was born in Germany, but the modern icewine capital is Canada — and the reason is pure climate. Icewine needs a hard freeze every year, and as European winters warm, Germany and Austria increasingly get seasons where the −8 °C freeze never reliably comes, and no icewine can be made. Canada's cold continental winters deliver that freeze on schedule, in regions that still get a full ripening summer first.
The result: Canada produces more icewine than all other countries combined. The very winter cold that limits what Canadian gardeners can grow is, for this one wine, the country's single greatest advantage.
Can You Grow Icewine Grapes at Home?
You can grow the grapes; making true icewine at home is another matter — it needs a large crop left to hang and lose most of its weight, serious bird netting, and a precise overnight harvest and press at −8 °C.
